- 200 gramos tofu (escurrido)
- 70 ml agua
- 70 ml leche de coco
- 1/3 cucharadita rasa curry

- 1 pizca pimienta negra
- Sal
- Parmesano rallado (o similar)
- Ralladura de limón (opcional)

- Picamos el tofu en daditos pequeños y lo rehogamos en una sartén, con un poco de AOVE, durante varios minutos. Cuando esté dorado, lo apartamos y reservamos.


- En la misma sartén, rehogamos la cebolla picadita 4-5 minutos a fuego medio. Añadimos la calabaza cortada en daditos y cocinamos otros 2-3 minutos.

- Ahora agregamos a la sartén el agua y la sal, tapamos y dejamos a fuego medio 6-7 minutos. NOTA: con estas medidas me queda una salsa densa, si la quieres más líquida, añádele más agua en este paso.

- Batimos las verduras junto con la leche de coco y las especias curry, jengibre y pimienta (o a tu gusto).
- Vertemos la mezcla ya batida a la sartén. Una vez que empiece a hervir, añadimos el tofu, removemos bien para que se integren los sabores y ya tenemos la salsa lista.

- En el momento de servir, le añadimos por encima un poco de parmesano rallado (o alternativa vegana) y una pizca de ralladura de limón (opcional). ¡Buen provecho! 😊😋
