- Pelar y cortar en rodajas las berenjenas. Colocarlas en un colador de fideos con un poco de sal, al menos media hora...(largada un jugo amargo que no sirve)



- Al ajo yo le saco lo del centro

- Poner a hervir el agua y el vinagre e ir colocando en hervor, las berenjenas de a poco(sin ama tomarlas) un minuto aproximadamente y sacarlas para colocarlas en una servilleta de papel que absorba el líquido. (Repetir con todas)
- Colocarlas en un bowl grande y allí colocarle sal y todos los ingredientes restantes a gusto. Mezclarlas bien para que todas estén condimentadas (despacio, sin romperlas).
- Colocarlas de una en una en un frasco de vidrio bien limpio. Llenarlo con aceite, fijándose que cubra todas las berenjenas y colocarles 1 o 2 hojitas de laurel. (Si te gusta la pimienta, podés agregar unos 2 granitos)
- Reservar al menos por 3 días en heladera (Yo las comí al otros día 🙊) pero cuanto más tiempo reposen mejor.
- Disfrutar 🤤. Yo las acompañé con el pan de molde, que tengo en otras de mis recetas.
- Opcional: otras personas van colocando las berenjenas sin condimentos en el frasco e intercalando los mismos con berenjenas hasta terminar. (Yo las condimento juntas para que todas tengan el mismo sabor)
